Gluten-Free Lifestyle Survey Results pdf

Thanks to everyone who took the time to participate in our Gluten-Free Lifestyle Survey. Our goal to identify patterns of behavior during Covid-19 based on a series of questions resulted in several logical groupings or “mindsets”, with respect to particular habits and preferences for how people plan, shop, prepare, cook and/or source their food. Covid-19 has presented additional challenges to those of us maintaining an essential gluten-free diet. Access to safe, reliable gluten-free food is among the biggest concerns, especially for high risk people under strict quarantine. Here’s a look at our respondents, and their prevailing mindsets during the novel coronavirus pandemic.

Mindset1 – Fortress Mentality (39%)
These individuals have acknowledged the seriousness of the current climate and are anxious about what is out of their control. When it comes to their meals, they trust their own kitchen environment and the staple products that have remained tried and true. A fortress mentality likely affects the brands they trust and stores they buy from.

Mindset 2 – Focus on Acquiring Food and Shopping Methods (22%)
These individuals are broad consumers who do not consider meal-time a chore. When it comes to their meals, they are more likely to source their food or meals from websites and mobile apps. They are more likely to engage in grocery delivery, and like to source their foods using different methods. Technology is involved in their process but they are still going to the grocery store for what they want on a weekly basis. 

Mindset 3 – Focus on Preparing Food; Cooking vs Ordering (39%)
These individuals have not let the current pandemic affect their ability or routine with respect to food preparation. When it comes to their meals, they cook whatever and whenever they feel like it, just like before. The frequency with which they cook has not changed. The difference now is the source of their inspiration; where they look when deciding what to cook. This group has increased their use of digital content on social media, websites, apps etc. However, they also still trust their gluten-free cookbooks and magazines and like to play it safe too. These are likely well-adapted gluten-free consumers who enjoy cooking but feel confident in ordering food as well.

When studying the data, we made a few intersecting observations.

Observation 1 – All respondents continue to buy food, and they need to trust what they buy and where they buy it. 

Observation 2
– Finding inspiration for the next meal, long-term, is hard. They all look to friends and family (and recipe platforms) for meal ideas.

Observation 3 – When they cook, they want simple and easy, but authentic food they can be proud to serve themselves and their families.

Gluten-Free Baking Tips – June 2020 Newsletter.pdf

You may be reading this for the first time, but if you have ever attempted gluten-free baking, no doubt you have experienced some of the challenges alternative flours present. Here are 3 simple tips to help you succeed when baking with gluten-free flour.

Tip #1 Choose the Right Gluten-free Flour, Blend or Mix
All gluten-free flours are not created equal. Depending on what recipe you are making, different flours will yield very different results. Today there are many options readily available, but it’s important to understand what you are buying. Most gluten-free flour can not be substituted one-for-one for wheat flour without adding additional proteins and a binder which adds elasticity to the dough. All-purpose gf flour blends contain a combination of flours, starches and Xanthum Gum. GF baking mix formulations include a leavening agent such as baking soda or baking powder and may contain other additives like sugar, salt and milk products.

Tip #2 Mix Batter Longer and Let It Rest
Mixing gluten-free batter longer aerates it so baked goods have a better structure. This will allow it to rise better and have a more traditional domed top, especially true for bread, muffins and cakes. When making bread, biscuits, pancakes and muffins cover the batter and let it set for 30 minutes to give the gf flour additional time to absorb liquids and fats. 

Tip #3 Don’t Under bake
When testing for doneness, cakes may still seem wet and soft to touch at the conclusion of the bake cycle. In general, when converting a non-gluten-free recipe, add a few extra minutes to the bake time to allow liquids and fats to be completely absorbed. As long as the baked goods are not burning, it will not harm them to bake a little longer and it will help offset any gritty texture in cakes, bread and muffins if your flour tends to perform that way.

While most governors are planning a phased reopening, timelines vary by state. Limits on capacity and types of services for retail and hospitality businesses differ too. Lockdowns are being replaced with some type of strategy, which will “change behaviors for the foreseeable future”, said Michael Ryan, executive director of the WHO Health Emergencies Program. 

So what will life look like after the stay-at-home order is lifted? Recommendations from public experts include a variety of social distancing and sanitation protocols. Depending on where you live, the new normal will look differently. Wearing masks in public, maintaining safe distances, and bans on sporting events and large social gatherings could be commonplace. As eateries start letting customers trickle into their establishments, new dine-in rules such as temperature checks at the door and logging of customer information for possible contact tracing are being implemented in certain locations.

But, navigating the new normal can have its benefits too. Many are choosing to continue their new safe-at-home practices voluntarily. Inspired by a new awareness on health, home cooking is more popular than ever. Cooking at home just a few times a week can reap big rewards. Studies have shown that when you regularly prepare home-cooked meals, you’re also more likely to make healthier choices on those occasions when you do eat out. 

So while uncertain times may still lie ahead, exercise caution and take refuge in the comforts of your own kitchen. Invite a few friends or simply unite your family over a healthy, home cooked meal. Bon appetit!
